Captain America AU is a fanwork that features someone other than Steve Rogers as Captain America, thus making it an alternate universe. It is often combined with Winter Soldier AUs in a sort of Role Reversal AU.
Canonically, many characters have assumed the "Captain America" role, including Bucky Barnes, Sam Wilson, Scott Summers, Danielle Cage, Roberta Mendez, and Samantha Wilson. See Wikipedia for a complete list.
