Fate/stay night is a Japanese visual novel developed by TYPE-MOON that follows Emiya Shirou as he is pulled into a battle between Servants and Masters known as The Holy Grail War. The game went on to be adapted into several animes, mangas, novels and spin off video games. The collective franchise is known more simply as Fate/
Canon
After a mysterious inferno kills his family, Emiya Shiro is saved and adopted by Kiritsugu Emiya, who teaches him the ways of magic and justice. One night, years after Kiritsugu's death, Shirou is cleaning at school, when he finds himself caught in the middle of a deadly encounter between two superhumans known as Servants. During his attempt to escape, the boy is caught by one of the Servants and receives a life-threatening injury. Miraculously, he survives, but the same Servant returns to finish what he started. In desperation, Shirou summons a Servant of his own, a knight named Saber. The two must now participate in the Fifth Holy Grail War, a battle royale of seven Servants and the mages who summoned them, with the grand prize being none other than the omnipotent Holy Grail itself. Fandom
Fate/stay night was TYPE-MOON's first commercial work, following its transition from a doujin soft group. The company already had some success with it's previous visual novel, Tsukihime, which lay the foundation for the world that Fate/stay night would later take place in. Fans often refer to the shared setting as The Nasuverse after series creator Kinoko Nasu.
Fate/stay night's first anime adaption was produced in 2006, a film was produced in 2010, a prequel anime Fate/Zero was released in 2011 and another anime that adapted a different route from the visual novel was produced in 2014. This has brought many fans to the series over the years and has lead it to become somewhat of a powerhouse fandom in Japan as well as having a large following within English speaking fandom.
The visual novel itself has never been officially released outside of Japan, however in 2008 a fan translation was released by the group Mirror Moon.
