Novel
Lucy is the first victim of Dracula in England. His supernatural powers start affecting her even before he comes there, because it's implied that her sleepwalking makes her sensitive to them. He first attacks her in Whitby soon after arriving there on the ship; after she returns to London, he finds her there and starts visiting her room at night, slowly drinking her blood in her sleep. Eventually she dies of blood loss and turns into a vampire. It's left unexplained whether Dracula ever visited her after her resurrection or why he turned her.
Adaptations
While in the book Lucy isn't aware of Dracula, some Dracula adaptations like the 2006 movie or the 2020 series show her being attracted to him, the tendency that goes as early as the 1931 Universal movie. It's common for Dracula/Mina stories to sexualize Dracula/Lucy dynamic as well, which happens, for example, in the 1992 movie and Dracula the Musical. There are also Dracula pastiche books that have them in sexual or romantic relationship, such as Now Comes the Mist and Lucy Westenra Series. In the scholarship analyzing the book, it's common to interpret Dracula as incarnation of Lucy's and Mina's repressed sexual desire, which also might have contributed to their portrayals in the adaptations.

While Dracula/Lucy shippers exist, most stories with the pairing are straighforward horror about his predations on her. They may be noncon or have noncon elements.
