Eric Cooper is a minor character in the Assassin's Creed universe, and notably the first canonically transgender character in the AC universe. (Some fans interpreted the character of James Kidd/Mary Read in Assassin's Creed IV: Black Flag as a trans man or nonbinary, but this is not a widespread fanon, and only Ned Wynert and Eric have been confirmed transgender by Word of God.)
Eric does not appear visibly in any of the AC games, although some documents in the Jack The Ripper DLC for Assassin's Creed: Syndicate are written by him. His main role was in the Initiates interactive web content, which has been discontinued by Ubisoft.
