Priest!fic refers to (usually AU) stories in which one or more of the characters is a priest, as well as to stories in which one or more characters dress up as a priest.

In AU works, where one or more characters are recast as a Catholic Priest, works often focus on the taboo of beginning a romantic relationship with someone who has taken a vow of celibacy. The character in the priest role may have their beliefs tested by a growing attraction, and begin to question their vows. Hurt Comfort is common in these works, with the Priest often providing comfort or advice in a time of need, leading to both characters developing romantic feelings. It often leans into blasphemy kink

It's a common trope in Supernatural fandom, after an episode where the characters disguise themselves as priests. In other fandoms, the character who is a priest in the story is often Catholic or in some way particularly associated with Christianity or religion in canon. Sometimes someone not correlated with a specific religion but who somehow has strict habits that lead to a resemblance on some level to the attitudes of a priest, as someone quite correct, who follows strict rules.

However sometimes the trope can be used on characters with characteristics totally different from those expected in a priest, he can be someone explosive, who has had many setbacks in his life and is transformed into a priest as a way to overcome his impulses and mistakes.

Bandom

• My Chemical Romance: priest!Gerard is a popular trope in MCR fics due to that one time he went on stage dressed as one(ca. Revenge era). Often paired with paranormal elements and demon AUs. Sometimes the other memembers are priests themselves.
  • Unholyverse series [1] by Bexless. Non-band AU in which Gerard is a Catholic priest and they collectively fight evil. (2008-2009)

Inception

• Hallefuckinglujah by weatherfront. Arthur/Eames fic in which Arthur pretends to be a priest in a dream for a job.
• My Religion Is You by maybe77. Arthur/Eames fic in which Arthur is a priest and Eames is a new parishioner.

Merlin

• Dóchas by phys_nut. Modern AU in which Merlin is training to be a priest and Arthur was raised to be anti-religion.

Stargate Atlantis

• Si Muovo by Kass and Sihaya Black. In which Rodney is a Jesuit priest (and theoretical astrophysicist) and John the Alaskan bush pilot who falls for him. (Not quite an Earth AU)

X-Men: First Class

• Sacrament by yahtzee. Erik/Charles AU in which Charles has to decide whether to leave the priesthood. (2012)

Supernatural RPF

• Have You Seen Him Who My Soul Loves by veronamay. J2 AU in which Jensen is a local priest giving pre-marital counseling to Jared and his fiancé.

The Man from U.N.C.L.E. (film)

Once Upon a Time

• priest!Killian Jones is a somewhat popular trope in fics, possibly due to actor Colin O'Donoghue previously playing a priest in the 2011 movie, The Rite. Works can be Modern AUs set in a universe without magic, or canon divergent AUs where Captain Hook is cursed and living in Storybrooke as Father Jones.
• Peace I Leave With You by jncar, When Emma needs a friend in Storybrooke, she finds one in the sinfully attractive priest Killian Jones. AU covering seasons 1 and 2, featuring cursed-Hook.

Star Wars

• And the Light that Shines in Darkness by leupagus and wobblycompetencies. In the aftermath of the Starkiller War, Leia takes the crown and her brother Luke goes to the Church. Decades later, sparks fly when Poe Dameron meets the Archbishop. Luke/Poe, set in an AU version of 1930s Europe.
