The term GBBO AU refers to fanworks set in an alternate universe in which characters participate in the British television show The Great British Bake Off, which started airing in Great Britain in 2010.
GBBO AUs are a specific subset of Baking AUs. The fanworks might intersect with GBBO RPF in crossovers which use canon show participants, presenters and judges as characters. They might also recast all canon roles (judges, presenters...) with members of whatever fandom the fanwork is set in.
